Suyo Cucumbers are coming’ in hot, y’all!
It is very fitting that our most refreshing produce coincides with the hottest time of the year, and thank goodness. We are obsessed with our Suyo cucumbers (and you will be too, I promise!) It’s not only their impressive size, but their taste is oh so crisp and refreshing (and slightly sweet!)
Here is how our staff and friends like to use them.
Farmer Malone and her family had some much needed pool time this weekend accompanied by some refreshing snacks and drinks! Hummus, salad, and Micheladas all featuring our Suyos!
Malone’s Hummus
1 can of chickpeas
1/4 cup tahini
juice of 1 large lemon
Add to taste: sesame seeds, zataar, sea salt
Blend all ingredients in a food processor or blender until smooth!
Recommended accompaniments: Suyos!, Carrots, Radishes (and any other crunchy veg!)
Malone’s Watermelon and Cucumber Salad
1/2 Watermelon cut into chunks
1 Suyo cucumber sliced
2 Finca Gold Cherry Tomatoes halved
1 cup cilantro chopped
1 cup Finca basil chopped
1 bunch Finca green onion chopped
Dressing
1 jalapeno thinly sliced (soaked in balsamic vinegar)
1 lime (juiced)
1 cup olive oil
1 cup balsamic vinegar
Sea salt and black pepper to taste
Mix dressing ingredients together and poor over salad. Enjoy!
Malone’s Michelada
1 suyo cucumber
1 large Finca tomato
To taste: Worcestershire Sauce, Tabasco, Celery salt, Sea Salt, Lime Juice
Blend ingredients, double strain, then serve with your favorite beer and some Chile salt!
This past Sunday, Farmer Cat and Fana celebrated Eid Mubarak which marks the end of the Muslim holiday Ramadan with a celebratory feast! Cat and Fana made this beautiful salad using our tomatoes and Suyo cucumbers.
Cat and Fana’s Suyo Salad
1 Suyo Cucumber sliced
1 Finca tomato sliced
4-6 Finca Green Peppers sliced
1/2 red onion thinly sliced
juice of 1 lime
splash of olive oil
salt and pepper to taste
Ceci made a refreshing gazpacho this weekend to beat the heat!
Ceci’s Suyo Gaspacho
1 Suyo Cucumber
2 large Finca tomatoes
1 package frozen passionfruit
3 sprigs of Finca mint
3 tablespoons of olive oil
1 teaspoon pink sea salt
1 tablespoon Finca mooring powder
Mix ingredients in blender and enjoy!
