Season’s Eatings: Chard Frittata

Chard Frittata

Yield: 4 servings

INGREDIENTS

8 farm eggs

1/3 cup grated Parmesan cheese

2 Tbsp coconut oil or bacon fat

1 chopped spring onion, white and green parts

1 bunch Swiss Chard (or spinach) coarsely chopped

Salt and Pepper to taste

DIRECTIONS:

Turn oven to broil. Whisk eggs, and add cheese, set aside. Heat oil in 10” cast iron skillet (or oven safe skillet). Sauté onions until soft. Add Swiss chard or spinach. Season with salt and pepper. Pour in egg mixture, tilting skillet to evenly distribute. For about 2 minutes over medium heat at stove, let egg mixture cook. Transfer to oven to broil until egg is cooked through and starts to brown, about 3-5 minutes. Remove from oven and loosen edges to slide onto plate and serve. Enjoy for breakfast, lunch or dinner!
