Looks like we might have done one too many rain dances at the farm this season, more rain expected for the next week or so! The plants are recovering from the recent flooding event and we are getting the fields tidied up. It’s hard to keep up with the weeds when it is raining this much!
Mary shared some of her cucumber, tomato salad with me a few days ago and it was just what I needed to get through the remaining field work we had for the day. Simple, light, and refreshing!
Ingredients:

6 cups coarsely chopped cucumber

2 large tomatoes (about 1 pound total), coarsely chopped

1 bunch scallions, chopped

1 cup assorted pitted olives (such as Kalamata or Gaeta), halved

1 7-ounce package feta, crumbled, divided

1/2 cup coarsely chopped fresh mint
-
6 tablespoons extra-virgin olive oil
-
1/4 cup fresh lemon juice
-
Kosher salt and freshly ground black pepper
Preparation:
Combine cucumbers, tomatoes, scallions, olives, half of feta, and mint in a large bowl. Whisk oil and lemon juice in a small bowl; season dressing with salt and pepper. Pour dressing over salad; toss to coat. Season to taste with salt and pepper. Sprinkle the remaining half of the feta over and serve.

Cucumber
These cucumbers have a light, fresh taste that is pleasantly cooling during these warmer months. They give a cooling crunch to your salad and are great additions to sandwiches or wraps. Our staff loves making tzatziki with them or slicing them and putting them in water for an incredibly refreshing drink on those especially hot days!
Radish
Radishes are a great addition to salads or as a snack to enjoy by themselves or with dips. They are also enjoyed sauteed, braised, or roasted, neutralizing a lot of the bite and increasing their sweetness. Try pickling them, as well!
Summer Squash
Despite the variety of shape and color, summer squash all have a mildly sweet and nutty flesh that is prime for sauteing, grilling, or roasting. Try summer squash in pasta or rice dishes, soups, eggs, and salads.
Beets
These beets have a deep earthy flavor with mild sweetness. They can be roasted, steamed or pickled and paired with fragrant herbs like basil or mint and sour cheeses like goat or feta. Beets are also a great addition to juices!
Tomatillo
These delicious tomatillos are ideal for any salsa.

These tomatoes are a combination of sweet, tart, and tangy and are the perfect addition to salads for the color and the bursts of flavor! Use them in sandwiches, pasta sauces, and just as a snack with a drizzle of olive oil and some salt and pepper!
