It’s Pepper Season, y’all!

And we are absolutely LOVING these mini sweet peppers! They have the fresh crispness characteristic of traditional bell peppers, but with a more pungent earthiness that is just DREAMY. We love snacking on these peppers raw or adding them for an satisfying crunch in our sandwiches or salads! Sauté them in stir fries with other veggies, grill or roast them to bring out their sweet side. These peppers can do it all.

Farmer Jess has been using these peppers in all of her salads.

Farmer Jess Salad (pictured above)

-Finca Swiss Chard

-Finca Kale

-Shaved Finca Carrots

-Sliced Finca Sweet Peppers

-Sliced Finca Cucumber

-1/2 Avocado

Dressing

-1/4 cup olive oil

-1/4 cup apple cider vinegar

-1 tbsp honey

-1 tbsp dijon mustard

-1 tsp sea salt

-1 tsp pepper

-chopped Finca basil

Place all salad ingredients in a large bowl. Mix all dressing ingredients together and pour desired amount over salad. Enjoy!

Farmer Malone and her family have been enjoying the peppers in their fish dishes!

-One large or a few pieces of fish of your choice (salmon in pictures above)

-Finca Sweet Peppers

-Mango

-Lime

-Butter

-Salt

-Smoked Paprika

Place fish on baking sheet and top with all ingredients above. Cover and bake at 375 degrees for 12-22minutes (depending on size of fish).

Serving suggestions: on top of cilantro rice topped with Finca green onions and a side of guacamole!
