Join Karen Man & Sky Hanka for brunch featuring chickens from Tejas Heritage Farm and waffles made with grains from Barton Springs Mill. If that isn’t cool enough, we’ll beat the heat with agua frescas made with cool produce and sno-cones made with forgaged ingredients. We promise it’s worth waking up early for this!

Karen Man, known for her baking presence and co-founder of Oxheart Restaurant and Public Services, currently spends most of her spare time baking with whole grain and learning new skills like ceramics and graphic design. She misses feeding a large number of people on a daily basis and is always excited to help host pop-ups that allow her to express current passions.

With Houston roots, Chef Skyler Hanka started her training at the Culinary Institute of America in New York then completed her Bachelor in Culinary Nutrition in Colorado. Currently, she is working towards her masters in Integrative Nutrition. While sous cheffin it at Brazen in Colorado , she focused on foraging, charcuterie,fermentation. She has brought all her passions with and hopes to continue to learn and grow. get #culinarywildflower

The waffles will be made from grains from Barton Springs Mill, producing flours that are fresh, nutritious, and delicious from stone-milled heirloom and landrace grains, many of which were grown here in Texas in the early 1900s, now grow here once again. Ninety percent of their grains are grown by Texas farmers, using sustainable organic practices, coming straight from the farmer’s combine to their door. Barton Springs offer whole grains and an array of whole grain and sifted flours for all baking, culinary, brewing, and distilling needs

The chickens are locally sourced from Tejas Heritage Farm. All of their birds are pastured and free range so they develop lean, firm textured meat with a wonderful depth of flavor. All birds and animals are raised on certified organic feed, free of antibiotics and hormones and are supplemented with sprouted grains to further enhance their flavor. All birds are processed on the farm using their State licensed butcher shop, allowing them to control all aspects of their production and ensure the finest poultry available for you and your family.
