CSA Family,

I hope y’all  enjoyed your first week of produce of the fall season! The weather is finally cooling down and the leafy greens are loving it. 

We were lucky enough to get some pears for your shares this week and below is an idea of how to use them.

Thank you all for being part of this journey with us!

For the Salad

  • 6 cups mixed greens

  • 1 pound pears firm but ripe, thinly sliced

  • 1/2 cup pomegranate seeds can substitute dried cranberries

  • 1/2 cup blue cheese crumbled

  • 1/2 cup candied pecans chopped (almonds and walnuts also work)

For the Dressing

  • 1/2 cup olive oil

  • 3 tablespoons balsamic vinegar

  • 1 tablespoon honey

  • 1 1/2 teaspoons Dijon mustard

  • salt and pepper to taste

WHAT’S IN THE SHARE

Roselle

The leaf has a unique tart taste. Use it in place of citrus in a salad.

Okra

Okra has a very unique taste and texture-the taste has been described as somewhere in between eggplant, green beans, and asparagus and the texture as crunchy exterior with a softer inside due to its large soft seeds. We love eating our okra raw or roasting to bring out its tenderness. You can also try pickling your okra, it’s delicious!

Squash (Gundermann Acres)

These are mildly sweet with a nutty flesh that is prime of sauteing, grilling, or roasting. Try summer squash in pasta or rice dishes, soups, eggs, and salads.

Lettuce (Verde Greens)

This lettuce is especially delicate and crisp. It gives salads a clean crunch and it’s broad leaves could also act as a receptacle for lettuce wraps.

Arugula (Whitehurst Farms)

Arugula is especially fragrant and peppery. Try using in your salads to add an extra kick or in pasta dishes alongside basil and mint. This arugula also makes a fabulous pesto and is a great addition to sandwiches and burgers.

Pear (Lightsey Farms)

These pears are a bit hard to the touch, but juicy and sweet on the inside.
