Batir los huevos y agregar el queso, reservar. Caliente el aceite en una sart\u00e9n de hierro fundido de 10 \u201d(o en una sart\u00e9n apta para horno). Saltee las cebollas hasta que est\u00e9n suaves. Agregue acelgas o espinacas. Condimentar con sal y pimienta. Vierta la mezcla de huevo, inclinando la sart\u00e9n para distribuirla uniformemente. Durante unos 2 minutos a fuego medio en la estufa, deja cocinar la mezcla de huevo. Transfiera al horno para asar hasta que el huevo est\u00e9 bien cocido y comience a dorarse, aproximadamente de 3 a 5 minutos.
